Ireland Highlights

Once the medieval capital of Ireland, Kilkenny has a rich heritage that is easily explored. The narrow streets and beautiful architecture showcase the history of this wonderful place, as well as the many landmarks like the famous Kilkenny Castle. The castle is the signature feature of the city and a symbol of the Norman occupation, so why not venture a visit to not only enjoy the beauty, but learn the interesting history that awaits there? There is also the lovely medieval town of Cashel, home to traditional seat of Kings, the Rock of Cashel. This and many other historically significant sites are just waiting to be explored, like the oldest city in Ireland, Waterford. Believed to have been founded by the Vikings as early as the 9th century, the past is evident there even today, with features like the Viking Triangle and the distinctive and crucial Reginald's Tower. The journey into the history of this great country must include drinks and, at the Kilbeggan Distillery Experience, you can discover the makings of real artisan Irish whisky, and at the Guinness Storehouse, learn the humble beginnings of Ireland’s national drink. From cultural attractions and traditional towns to National Parks such as Glenveagh and Connemara, this ancient country certainly won’t disappoint!

Food and Drink

Guinness

The dark dry stout Guinness is not just the national drink of Ireland and a legendary part of the culture there, but it is actually from Dublin! It has a bitter, creamy, and malty sweetness, with notes of chocolate and coffee.

Colcannon

Champ is a simple Irish dish of mashed potatoes and spring onions, and a beloved variation, Colcannon, adds cabbage and herbs to the mix. This delicious bowl of buttery mash is the perfect comfort food and, if you have any leftovers, they can be made into tasty, fried Colcannon cakes.

Soda Bread

Irish soda bread is a traditional recipe using flour, salt, baking soda and buttermilk. It is considered a quick bread due to it being simple, easy and speedy to make. The deep scores made before baking the bread are supposed to let the fairies out (and help it cook through).

Irish Coffee

Classic Irish coffee takes sweet and creamy hot coffee and adds Irish whisky, making a delectable caffeinated and alcoholic beverage. Topped with tasty cream, or sometimes cream liqueur, this drink is a great one to try when visiting Ireland.
